spicy salami and hummus salad

I’d say about 80% of my salad recipes are beautiful accidents. I open my fridge, pull out what will soon expire, and make it work. I discovered this dish by accident but thought it was so delicious that I find myself grocery shopping just to make it.

I crisp spicy salami and sprinkle it over a bed of mixed baby greens and purple onion. The dressing is a unique combination of spicy hummus thinned with lemon juice.

serves 1

Ingredients:

3 oz spicy salami

4 cups mixed baby greens

1/8th cup sliced red onion

1 T spicy hummus

juice of 1 large lemon

Directions:

Cut the salami into bite-sized pieces and heat until crispy on a medium sized skillet.

Whisk the hummus and lemon juice together.

Pour the dressing over the mixed greens, onion, and salami.

Enjoy!

Time: 5 minutes
